An Aussie Barbecue

Sunday morning we awakened and Don felt like he should test for Covid. He didn't feel bad, but he has always said, "If it's a cold, test." And sure enough, he was positive. So the rest of us tested, and Jani and I both were positive, too. Well, that changed a few of our plans. We did go watch Lawn Bowls - masked and outside - but we skipped church and our walk on the beach. Instead, we quickly visited Dane and Edie, Jani and Brian's son and daughter-in-law, and came home to prepare for our barbecue. Jani had arranged with the family to come over for happy hour prior to dinner, so the kids all came, but they stayed downstairs and we were on the deck. What a beautiful family! The grandchildren all played beautifully together (how could they not with the playground Jani and Brian have built), and the families were so sweet . . . we loved it.
Then Brian pulled out the barbie again, and he cooked veggies, kangaroo, emu sausage, and lamb chops.
I haven't had lamb chops in years, so it was quite a treat to have them. The kangaroo was surprisingly tender, and it was as if I was eating a fine steak! The emu sausage was good but, unfortunately, too peppery for me, though I ate all but the last piece. And the final treat? Pavlova. I had never heard of it, but it is a meringue topped with fruit. Sounds simple, but I suspect getting it soft, rather than crunchy like most meringue, is the trick. Anyway, it was superb.
Jani is a fabulous cook and an amazing hostess. What a way to end our trip - though we all could have skipped the Covid part!
